Creamy tomato vodka sauce recipe
posted on 2008.09.28 14:09:00 by BogieLast night, I made a reference to my homemade vodka sauce recipe on Twitter. I received a few messages from people asking how I make my vodka sauce, so I figured I’d share the recipe with you all on my blog.
Ingredients:
4 tbsp. butter (1/2 stick)
1 medium size yellow onion, diced or sliced into rings
3/4 cup vodka (non-flavored)
3 cloves of garlic, minced
16 oz. tomato sauce
1 pint heavy whipping cream
1 c. grated parmesan cheeseMelt butter in large skillet or frying pan (at least 2 1/2 inches deep) on medium heat. Add garlic to butter for 2 minutes. Add onion to pan for 3 minutes, or until onion is clear. Add vodka to pan and let simmer for 3 minutes, stirring occasionally. Add tomato sauce to pan and let simmer for 5 minutes, stirring occasionally. While tomato sauce mixture is simmering, whip heavy cream lightly (medium speed for 1 1/2 minutes). Add cream to sauce. Reduce heat to low-medium. Do not let sauce boil. Stir until cream and tomato sauce mixture has even consistency, gradually adding parmesan cheese to thicken. Sauce is ready when thick and has a deep orange/pink color.
Serve over linguine or spaghetti.
To complement the dish, I typically pan-fry some chicken tenderloins in a little olive oil and lay it on top of a plate of pasta before pouring the sauce over it. And, I like to cut the onions in rings as consuming the onions seems to bother my stomach a little bit, and it’s easier to set them aside while I eat if they’re sliced into rings.
